Spoiler Alert: Few things in life are nutritious, fast, and delicious. You can frequently have two of the three – but rarely do you ever get all three. This easy healthy guacamole recipe delivers it all! It was absolutely the best I’ve ever had. It was super quick and super easy!

Confession: I haven’t always been a fan of this addictive green stuff. It’s possible that I’ve even been overheard referring to guacamole as something that looks like it’s better kept in your tissue after you sneeze. With a similar consistency.

So, what convinced me of how luscious a good healthy guacamole is?

Since avocados are front and center in any guacamole and they are are off the charts for nutrients I thought I could put some lipstick on that avocado, so to say.

Avocados are an amazing source of vitamins and minerals. Avocados are a great source of B vitamins which help boost your immune system and help fight off disease and infection. The also contain vitamins C and E. As far as minerals go, they contain potassium to help control blood pressure, lutein which helps to maintain eye health, and folate which is extremely important during pregnancy and is necessary for cell repair. If that weren’t enough, avocados are low in sugar and high in fiber which can help maintain healthy blood sugar levels and help you feel full longer.

Most importantly, avocados are one of those “good fats” everyone keeps raving about. So if you don’t like some of the alternatives, this is a great place to start eating something amazingly delicious and good for you! Good fats help reduce sugar cravings along with high quality proteins.

If you’ve checked out any of my other recipes, you’ll know I’m more a fan of a “process” that allows freedom in creating and less a fan of a hard and fast “recipe.” There’s no better canvas for adding in your own creativity than this easy guacamole recipe.

Here’s what I did for this easy healthy guacamole:

First things first, let’s get that avocado flesh out! To quickly get at that delicious avocado, slice your avocado lengthwise with a chef’s knife and split it in 1/2. Take the sharp side of your knife and lightly “chop” it into the seed of the avocado. You can then twist the knife with the seed attached and the seed will lift right out! Then scoop the flesh from each half of the avocado into your mixing bowl.

I like my guacamole a little “chunky,” so I used the fork method instead of a mortal and pestle. But the choice is yours.

I smashed two avocados in the bowl. Yes, “smash” is a technical cooking term for those of you who did not know.

Next, juice one lime into the bowl and mix well with your fork. The ascorbic acid in the lime (or you can use lemon) keeps the avocado from oxidizing and turning brown.

Chop cilantro to taste and add it to the avocado mixture.

A pinch of salt – to taste.

Then use fresh pico de gallo to taste.I LOVE the fresh pico I can get at our neighborhood Mexican restaurant, so I go a little heavy with this. It contains tomatoes, cilantro, red onion, and jalapeño if you wanted to make your own.

How much of each ingredient is completely up to you – get creative and personalize your own new healthy guacamole recipe!

The Secret Ingredient…

Now…drum roll, please. For the key to making the guacamole recipe that will be revered and talked about for years to come – the secret ingredient: Lime essential oil.*  You will be amazed at how little you will need and how lime essential oil can magically transform your guacamole from run of the mill to out of this world! Just 2-4 drops of lime essential oil will make your guacamole shine. Try two drops and see how you like it. If you like a little more lime, add one drop at a time until your taste buds are doing their happy dance. This stuff packs a punch!

If you don’t have lime essential oil, then feel free to juice one lime and add it instead.
